Tonight we tried yet another fantastic recipe from Jessica Seinfeld's newest cookbook, "Double Delicious." It was really easy to make but I have to admit that I was extremely skeptical based on the way it smelled while I was preparing it. This was my first experience using Sesame Oil and it is STRONG. Once everything was blended and cooked though it had a very subtle flavor and we all loved it. Leyna had 3 helpings, the second of which I swear was about 2 seconds after we sat down to eat. Cora cleaned her bowl as well. I served broccoli on the side but next time I might just mix it in. It's crazy that there's also a vegetable puree in the sauce - you don't taste it at all. We'll be making this again FOR SURE.
Lo Mein
Adapted from Double Delicious by Jessica Seinfeld
1 box spaghetti (I used Barilla Plus)
1/2 C chicken broth (I used homemade)
1/2 C butternut squash puree (her recipe called for sweet potato puree)
2 T reduced sodium soy sauce
1 T firmly packed brown sugar
1 t sesame oil
2 t cornstarch
2 T olive oil
3 cloves garlic, minced
4 green onions, white parts only, thinly sliced
4 boneless pork chops, trimmed of fat and cut across the grain into 1/4 inch slices
Cook spaghetti according to package directions. Set aside.
In a medium bowl combine the chicken broth, butternut squash puree, soy sauce, brown sugar, sesame oil, and cornstarch. Set aside.
Heat olive oil in a large skillet on medium-high heat. Add garlic, green onions, and pork. Cook until pork begins to brown.
Add soy sauce mixture and spaghetti to skillet. Reduce heat to low and cook for a few minutes until sauce thickens and coats noodles. Add a little more chicken broth if the sauce seems too thick.
Transfer to bowls. Garnish with sliced green onions and sesame seeds. Serve immediately.
