With the weather getting cooler, the girls have changed their requests for post-evening-walk popsicles into requests for hot chocolate. I've played around with a few recipes but I hate to have to cook on the stove every time we want to make two small cups of hot cocoa. Fortunately for me I found this recipe and it's great! (I did reduce the sugar and salt a bit and that's how I wrote the recipe below so check the site for the original version if you'd like.) Now I can keep the mix on hand and whip some warm cups up in less than 2 minutes :)
Homemade Hot Chocolate

Ingredients
3 C sugar
2 1/4 C unsweetened cocoa
1 t salt
Directions
Mix all ingredients and store in an airtight container.
To make hot chocolate warm milk and add 2 tablespoons of cocoa mix for every 1 cup of milk. Don't forget to top with marshmallows!
