Soup Week, Day 1: Tomato Basil Soup with Orzo

Welcome to Soup Week everyone! Our little Leyna LOVES soup so this week I am dedicating an entire week of dinners to her. Some of the recipes are tried and true and some are new to us. Hopefully all will be enjoyed!
Tonight's soup was "Tomato Basil Soup with Orzo." I made it once before when Leyna was 1 year old and she loved it so I was hoping it would still be a hit. Leyna  had 2 bowls and Cora was even willing to eat some if I fed it to her like a baby bird. She has been on a dinner strike for about a week so that's really saying something!
I found the recipe a way back then on a baby board so that's about all I know of it's origins. It is SO easy to pull together and not too expensive either. Hope you make it and like it!

Tomato Basil Soup with Orzo

Ingredients
1 T olive oil
2 cloves garlic, chopped fine
2 cans (14.5 oz) chicken broth (I used homemade)
2 cans diced tomatoes
1/2 C orzo
1 C chopped fresh basil
salt & pepper to taste
Parmesan cheese to taste

Directions
Heat olive oil in a soup pot and saute garlic until fragrant. Add broth and tomatoes and bring to a boil. Add orzo and simmer for about 10 minutes, or until orzo is tender. Stir in basil, salt, pepper, and Parmesan and simmer 3-4 minutes more. Serve with more Parmesan on top and some crusty bread for dipping.
