So I think I'll start a new weekly tradition called "What's For Lunch Wednesday." I personally think lunch is a difficult meal to plan and keep interesting. It's really easy to get in a rut and do the same old PB&J and chicken nuggets every other day. I'm hoping this will challenge me to come up with some new and exciting ideas. Coincidentally, we
did have chicken nuggets for lunch today because Leyna really wanted them after a long morning of playing outside. I tried to make the rest of the meal super healthy and interesting though :)
Here's the before:
(Tyson "natural" chicken nuggets, organic cucumbers, organic celery, hothouse cucumbers, homemade hummus, monteray jack cheese shaped like a leaf, and ketchup w/ no high fructose corn syrup)
And here's the after:
(confession: I ate the celery - it was not a hit)
I think this lunch was a success! I can't believe she ate the cheese because she usually doesn't. I'll have to remember to cut it in cute shapes from now on :)
