Last Wednesday I bought a rotisserie chicken from Costco for $4.99. I had no idea it would change my life. Seriously. Here's a little time line of my transformation into a rotisserie chicken groupie.
Wednesday Dinner - I popped the chicken in the oven for an hour and served it alongside mixed veggies and watermelon. The chicken was super moist and flavorful. The girls cleaned their plates!
Wednesday night - After dinner I pulled the rest of the meat off the chicken and put the carcass in the pot, filled the pot with water, added half an onion, a handful of baby carrots, about a tablespoon of peppercorns, 2 bayleaves, and half a teaspoon of salt. I brought it to a boil and then simmered it for about 4 hours. Then I strained it into 2 large bowls and stuck it in the fridge for the night.
Thursday afternoon - I took the chicken stock out of the fridge and scooped all of the hardened fat off the top. Then I filled freezable mason jars with my beautiful, homemade stock and stashed them in the freezer where they will wait to be part of all kinds of yummy fall soup creations. I felt very happy :)
Thursday dinner - I used one cup of the leftover pulled chicken to make these: Chicken Barrettes
Friday dinner - I used another cup of the leftover pulled chicken to make this: Garlic Chicken-Dijon Pizza
ARE YOU AMAZED YET??? Did I mention I only spent $4.99? For three dinners and about $5 worth of chicken stock in my freezer? I am in love.
