I'm so excited about this! For the past couple of months whenever we finish a loaf of whole wheat bread I throw the two ends into a gallon ziploc bag in the freezer. My bag was getting pretty full so today I pulled it out and thawed it on the counter. Then I covered a large baking sheet with the bread slices and toasted them in a 325 degree oven for about 20 minutes, turning them over halfway through. When they were cooled I put them in the food processor in batches, sprinkled in a little Italian Seasoning, and voila! Homemade Whole Wheat Breadcrumbs!!! Why am I so excited? I don't know, I just am!
Really, I think it's because I took something we normally throw away and turned it into something we normally buy, except healthier (because I've never seen whole wheat bread crumbs at store).
Tonight I mixed the breadcrumbs with a little garlic salt and Parmesan cheese and coated our chicken in it, then baked. I honestly have never seen the girls eat so much chicken. They were literally begging for more and it was all gone. SCORE!
Feeding toddlers and preschoolers a healthy variety of foods can be such a challenge. I'm always trying new recipes and ideas so here they are in case you need a little inspiration too!

Mother's Day Fare
I did all of the cooking today but none of the dishes. I can live with that!
| Actually I didn't make this. Came down to this lovely breakfast this morning: Berry & Yogurt parfait, toasted Nutella bagel thin, and a mimosa. YUM. |
| We took breakfast to Mee Maw, Spinach Quiche... |
| ...and kebabs of homemade lemon mini muffins, strawberries, and blackberries. |
| Then it was home to make dinner for Nana! Frogmore "Stew," salad, & rosemary rolls. |
| And dessert was super simple: store-bought angelfood cake and some fresh berries. Delish. (accented by the beautiful bouquet Nana gave me!) |

What's for dinner?
Salmon, Jasmine Rice, salad, and freshly cut pineapple.
This dinner has been in our weekly rotation for a few weeks now. Leyna would probably eat an entire salmon if we let her. She LOVES it. I cook it up in a cast iron skillet with either olive or grapeseed oil and a little mixed salt. Cora takes one bite of it every week and spits it out. I'm hoping she'll like it eventually! At least she eats everything else. Jasmine rice is our new aboslute favorite rice for it's taste and stickiness. It's so easy for the girls to pick up with a fork!
This meal is healthy, filling, and beautiful to look at. Love it!
