What's for dinner?

Salmon, Jasmine Rice, salad, and freshly cut pineapple.
This dinner has been in our weekly rotation for a few weeks now. Leyna would probably eat an entire salmon if we let her. She LOVES it. I cook it up in a cast iron skillet with either olive or grapeseed oil and a little mixed salt. Cora takes one bite of it every week and spits it out. I'm hoping she'll like it eventually! At least she eats everything else. Jasmine rice is our new aboslute favorite rice for it's taste and stickiness. It's so easy for the girls to pick up with a fork! 
This meal is healthy, filling, and beautiful to look at. Love it!

Pizza Friday - Costco

 Today we did our Pizza Friday with a lunch at Costco. Daddy met us and it was delicious as always :)
And while we were at Costco we got some Wild Alaskan Sockeye Salmon so that's what I cooked up for dinner. I drizzled it with some Wegman's basting oil and baked it in the oven at 350 for 20 minutes. Then I served it up with a garden salad and some lemon spinach couscous. Cora was a huge fan of the cousous but said the salmon was stinky. Leyna thought the couscous was offensive, but ate all of her salmon, as well as Cora's and some of mine. They both ate every last bite of salad. (In fact, one day last week Leyna ate an entire Romaine leaf with nothing on it - that girl loves her veggies!)

What we had for dinner...

Grilled Corn on the Cob, Grilled Shrimp, Grilled Turkey Kielbasa, and salad

The girls cleaned their plates! Leyna ate two ears of corn! For the girls' corn I husked it, rubbed it with butter, and wrapped it in foil because I knew they wouldn't want the char marks on theirs. It turned out PERFECTLY! And for ours I husked it, rubbed it with butter, and we just put it directly on the grill. It turned out perfectly as well! I don't think I'll ever bother making a dirty pot to boil corn again. Try it on the grill!!!

Panko Breaded Tilapia from Costco

No real recipes here but I just have to share one of our favorite products: Frozen Panko Breaded Tilapia from Costco. I try not to buy too many prepared foods but this fish is a real winner at our house and it's affordable too. Tonight the girls each ate twice as much as you see in the picture. I can't tell you how happy it makes me when they actually eat that much protein at dinner - it's the hardest thing to get in them most of the time. 
I served it with green beans (salad for the adults) and some taco rice I threw together (2 cups prepared brown rice + ~1 T homemade taco seasoning + ~1/4 C light Daisy sour cream). Easy peasy!
