Love Muffins

Leyna and I whipped up some delicious little muffins today. They only have about 1 gram of fat and I love the fact that they are chewy as opposed to crumbly, so there's less mess to clean up after you hand one over to a 2 year old.
Leyna calls them "Love Muffins" because we made them with love. Mommy Love and Leyna Love. In fact, she blew a kiss into the oven before we baked them just to make sure they had enough love in them. It worked!

Ingredients: 

1C flour
T baking powder
1/2 t baking soda
1/4 t salt 
1 t cinnamon
pinch of nutmeg
3 mashed ripe bananas
1/3 cup sugar
1/4 cup fat free vanilla yogurt
1 egg
2 t vanilla

Preheat oven to 350. Line muffin tin with paper cups. In a large bowl mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl mix banana, yogurt, sugar, egg, and vanilla. Stir wet mixture into dry mixture until just combined. Divide between 12 cups and bake for about 20 minutes, testing with a toothpick to make sure they're done. Cool and enjoy. Leyna at 2 in one sitting :)
